Chef Deepak’s Smoky Vegetable Khichdi Bowl A Nutritious and Flavorful Twist
Chef Deepak has unveiled a gourmet take on the traditional Indian comfort food with his “Smoky Vegetable Khichdi Bowl.” This protein-rich recipe combines essential dals, fresh vegetables, and a unique “Dhungar” (smoking) technique to transform an everyday staple into a restaurant-quality experience.
Ingredients for the Perfect Khichdi
The recipe emphasizes quality ingredients to achieve the best nutritional balance and flavor:
Base: ½ cup Tata Sampann Toor Dal, ½ cup Tata Sampann Moong Dal, and ½ cup rice (soaked for 15 minutes).
Aromatics & Spices: 1 tbsp ghee, 1 tsp Tata Sampann Turmeric, 1 tsp Tata Sampann Garam Masala, grated ginger, and salt to taste.
Vegetables: 1 cup of mixed vegetables (carrots, peas, beans, and cauliflower).
Toppings: 2 tbsp of mixed dry fruits (cashews, almonds, raisins) and fresh coriander leaves for garnish.
The Signature Smoky Garlic Tempering & Dhungar Method
The highlight of the dish is the infusion of deep, smoky flavors:
Tempering (Tadka): A fragrant blend of ghee, Tata Sampann Cumin, finely chopped garlic, a pinch of Tata Sampann Asafoetida (Hing), and Tata Sampann Kashmiri Red Chilli Powder.
Dhungar Method: To achieve the signature smoky aroma, a red-hot piece of charcoal is placed in a small bowl inside the cooked khichdi pot. After drizzling ½ teaspoon of ghee over the coal to generate smoke, the pot is tightly covered for 2–3 minutes, allowing the essence to infuse into the dish.
Preparation Steps
Cooking: Sauté ginger and vegetables in ghee, then add the soaked dal, rice, spices, and water (approx. 4 cups). Cook until soft (3 whistles in a pressure cooker).
Garnishing: Roast the dry fruits in ghee until golden brown.
Tempering: Prepare the smoky garlic tadka and pour it over the cooked khichdi.
Smoking: Apply the Dhungar method to lock in the smoky flavor.
Final Touch: Remove the coal bowl, garnish with the roasted dry fruits and fresh coriander, and serve hot.
