Hyderabad Welcomes ‘Vayu’ A New Rooftop Resto-Bar Highlighting Regional Indian Cuisine and Mixology
Perched above the city to capture the evolving social energy of Hyderabad, Vayu named after the Sanskrit word for wind draws inspiration from India’s earliest traveler that traversed coastlines, mountains, and deserts. Conceived by Mr. Amardeep Singh, Multi Property General Manager for the Hyderabad Marriott Hotel & Convention Centre and Courtyard by Marriott Hyderabad, the venue is designed as a vibrant social hub blending contemporary architecture with layered interiors. The spatial layout transitions seamlessly from intimate corners to communal tables and the main bar, creating an environment tailored for after-work gatherings, weekend celebrations, and dynamic evening crowds.
Culinary Offerings and Regional Menus:
Vayu’s menu explores diverse culinary landscapes across India, drawing from time-honored traditions, regional ingredients, and bold flavor profiles. Smaller plates feature creations like Shrimp Pickle with Masala Brioche, Chicken Wings Vepudu, Steamed Kalimpong Momos, and Jeedipappu Pakoda. Furthermore, the kitchen anchors its offerings across five distinct culinary traditions, featuring Andhra’s Gongura Mamsaam, coastal Karnataka’s Kundapur Ghee Roast, Kerala’s Meen Pollichattu, Maharashtra’s Kolhapuri Mutton Sukka, and Old Delhi’s classic Butter Chicken.
Thematic Cocktail Programme:
The bar experience is guided by The Paper Plane’s Logbook, a concept inspired by paper planes drifting across unfamiliar terrains to collect regional ingredients and memories. Notable signature cocktails include Crimson Wind, which pairs gongura with tequila and salted agave; Kokum Cloud, bringing together gin, kokum, and passionfruit; and Firestorm Ember, layering ginger-infused tequila with fermented chilli agave. Together, these selections capture the spirit of discovery and nostalgia, inviting guests to travel through taste as much as geography.
